This creamy and delicious one pot meal was a hit and so easy to make using the 8-quart Crock-Pot Express Crisp Pressure Cooker. It has a removable crisping lid that made the chicken breast perfectly crispy! The removable 8-Qt non-stick cooking pot is dishwasher safe and makes for easy clean-up. This is the perfect comfort food to enjoy anytime!
Express Broccoli Mac and Cheese with Chicken
Ingredients
- 16 oz pasta of choice (I used Gluten Free Fusilli)
- 4 1/2 cups chopped broccoli
- 3 large chicken breast or 4 small/medium
- 1 3/4 cup water
- 3/4 chicken broth
- 1 1/2 tablespoon olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp poultry seasoning
- 1/2-3/4 cup milk of choice (I used 2%)
- 1/2 whole cream
- 2 cups shredded cheddar cheese
- 1/4 cup shredded parmesan cheese
Instructions
Add 1 1/2 tablespoon of olive oil to the 8-quart Crock-Pot® Express Crisp Pressure Cooker. Place chicken breast in the Express Crisp Pressure Cooker, season breast with salt, pepper, and poultry seasoning. Now set the 8-quart Crock-Pot® Express Crisp Pressure Cooker to the sauté setting and brown both sides of the chicken breast. 
Add 3/4 cup chicken broth to the Express Crisp Pressure Cooker. Place the lid on and set to poultry setting. Cook the chicken breast for 15 mins. Release steam via vent and then carefully open. Remove chicken breast, place on a plate and allow to rest.
Leave all liquid in the 8-quart Crock-Pot® Express Crisp Pressure Cooker. Add dry pasta, 1 3/4 cup water. Place lip on and set for five minutes on high manual pressure. Release steam via vent and then carefully open.
Add broccoli and stir until softened and darkened. Stir in cheeses, cream, and milk. You may need to add additional milk to reach desired consistency.
Place whole cooked chicken breast (or cut) on top of Mac and Cheese. Place the Crock-Pot® Express Crisp Pressure Cooker Crisping Lid on top. Allow to crisp for 5 minutes and check for desired crisp.
