I’m excited to partner with Reynolds Wrap® for this post.

Ingredients

4 chicken breasts
½ teaspoon chili powder
1 teaspoon garlic salt
salt & pepper to taste
15 ounce can of black beans, drained & rinsed
1 can whole kernel corn, drained
1 small diced orange bell peppers
Salsa or Pico de Gallo
cilantro, tomatoes, avocado & jalapenos for garnish

Instructions

First, preheat your oven to 350°F.

Next, flatten the chicken to desired thickness and season with chili powder, garlic salt, salt and pepper. Now lay out 4 pieces of Reynolds Wrap® Heavy Duty Foil, approximately 16” long, one piece for each breast.  Place 1 chicken breast on each piece of foil and add beans, corn, peppers and salsa on top of the chicken breasts. Then wrap each in the foil like a present. Fold at the top, leaving space for the heat to circulate.  You will tightly seal the ends by double folding.  You want the packets to be fully sealed but not too tight to ensure the steam has room to circulate.. Repeat until all are wrapped.

Now place packets on a sheet pan and bake in the oven at 350°F for 30 minutes or until chicken is cooked through and reaches 165°F.  Carefully open packets and top with your desired toppings. Enjoy!
