Crockpot Sausage and Tortellini Soup

Crockpot Sausage and Tortellini Soup

Crockpot™ 6QT Easy-to-Clean Slow Cooker-Easy to clean non-stick ceramic coating makes more time to enjoy your loved ones!

Ingredients
1 lb 3 oz Italian sausage
1 onion, diced
3 garlic cloves, minced
3 carrots, sliced
3 stalks celery, chopped
14 ounces crushed roasted tomatoes, do not drain
28 ounce diced tomatoes, do not drain
3 oz tomato paste
2 tbsp Italian seasoning
1 tsp salt
1/4 tsp pepper
6 cups beef broth
12 oz package tortellini
1/2 cup Parmesan cheese
1 cup heavy cream
5 cups baby spinach
Remove sausage from casings.  Add into large skillet and brow crumbling as you do so.  Add the chopped onion to the skillet, sauté the onion until translucent.  Add in the garlic and brown for 1 min more stirring continually so it does not burn.
Add the sausage mixture, broth, diced tomatoes, crushed roasted tomatoes, tomato paste, sliced carrots, chopped celery, salt, pepper, and Italian seasoning to the Crockpot™ 6QT Easy-to-Clean Slow Cooker, stir to combine.
Select high heat for 4 hours. After the completion of cook cycle your CrockPot™ will move to warm.
Add tortellini, spinach, cream, and cheese.  Gently stir until the pasta and leaves are fully submerged into the liquid.  Place the lid on the CrockPot™.  Now select high heat and allow to cook 5-10 minutes until the spinach is wilted and the cheese has melted.
Reduce heat to warm.  Taste and add additional seasonings as desired. Serve directly out of your Crockpot™ 6qt Easy-to-Clean Slow Cooker, it will keep the soup warm! #CrockpotRecipes
