#AD I’m excited to partner with Reynolds Wrap for this delicious meal recipe.  Stuffed Sweet Potatoes are the perfect add on to any meal or Holiday celebration.   Sweet potatoes are a great source of fiber, vitamins, and minerals so enjoy without a ton of guilt! These are delicious and quite filling!
Sweet potatoes can be sticky and a mess to clean up.  I love using Reynolds Wrap Non-Stick Foil from @ReynoldsBrands for a simple cleanup!  I served the sweet potatoes right out of the packet, it doesn’t get much easier to make for mom than these!  These sweet potatoes are Yamtastic!!
Foil makes it easy to line pans and grills, or cover and wrap your dishes without the added hassle of cleanup.  Just be sure to put the dull side of the foil facing up – that’s the non-stick side.

Foil Packet Sweet Potatoes that are Yamtastic!

Packet Ingredients:

4 medium- large sweet potatoes
Salt and black pepper
olive oil
Reynolds Wrap® Non-Stick Foil
FOR SERVING:
1/4 cup dark brown sugar (coconut or date sugar are great alternatives)
1 teaspoon ground cinnamon
1/2 cup roasted pecan pieces
1/4 dried cranberries
1 cup miniature marshmallow

 

Directions:

Preheat the oven to 400°F.
Wash sweet potatoes and pat dry.
Tear off four sheets of Reynolds Wrap® Non-Stick Aluminum Foil each 16 inches long.  Place sweet potato in the center of the Reynolds Wrap Non-Stick Foil, dull side of each foil sheet to prevent sticking.  Then poke holes into the sweet potatoes, coat in olive oil and season with salt and pepper.
Bring up the long sides of the foil, so the ends meet over them. Double fold the ends, leaving room for heat to circulate inside.  Repeat for each sweet potato.
Double fold the two short ends to seal the packet. Fold the foil around the potato like a present.

Bake 60 mins or until potatoes until soft. Carefully open packets.
Top each as desired amount of brown sugar, marshmallows, cinnamon, dried cranberries, and pecans. You can get creative with your toppings!
Return to oven on broil until marshmallows are browned.
Serve immediately and ENJOY!
